The position

The cellar of the Bignotti family, in which the wine “Cultivar delle volte” is produced and finally bottled just starting from the grapes of his own vineyards, is located in Piamborno, Monte Grappa Street, behind the church of the village.

Winemaking "A Caduta"

They are two leveled cellars and they permit the so-called “A caduta” winemaking technique: at the arrival of the grapes there is a selection of the bunches and grapes are removed from the stalks. Then, red wines undergo the pressing phase, while for white wines there is a softer pressing.


When the first phase of fermentation has finished, the temperature is checked and after that, the wine is sent, by leaving falling down, to the underground cellar in which the fermentation goes on. It is then refined in steel or oak barrels and finally bottled.

Our sparkling wines are instead produced with a more classical method, the removal of stalks is handmade inside the underground cellar.
